Strawberry Summer Salad by -Lotus Blossom

STRAWBERRY SUMMER SALAD

4 three-ounce pkgs of Strawberry Jell-O

1/4 - 1/2 cup graulated sugar (according to taste)

Fresh strawberries

Cool Whip whipped topping

1. Mix Jell-O according to package directions, adding extra sugar to taste.

2. Place mixture in 9 x 13 cake pan (I used one that is clear glass.)

3. Place Jell-O in refrigerator until just barely set (NOT firm)

4. Clean and slice fresh strawberries lengthwise.

5. Place strawberries on top of Jell-O, using tip of wooden spoon to gently push them under the surface, if desired.

6. Return to refrigerator until firmly set.

7. Spread Cool Whip on top of Jell-O as if icing a cake.

Note: I made this recipe up one time when I was asked to bring a fancy, yet simple salad to a wedding reception for a friend’s daughter. I was amazed at the number of people who asked for the recipe! This is about as simple as it gets, but very refreshing on a hot summer day.
